Pét-Nat (meaning that this was bottled during the tail-end of the initial fermentation, and the bubbles are a result of that). This is the second bottling of 2021 Cosmos. It is a different blend but in the same style. The aromas are intense citrusy, think pomelo and orange and the mouthfeel has fine, creamy bubbles.

Tasting Notes: unripe kiwi, grapefruit pith and orange.
