Crafted in the ‘Traditional Method’ with the secondary fermentation occurring in the same bottle – similar to Champagne – this cider is a single-varietal bottling using 100% Baldwin apples grown in the Finger Lakes.

All the estate apple trees at South Hill Cider are grafted from Cornell University orchards, although some of the Baldwin fruit comes from other local farms.

The mouth-watering expression has fine bubbles, a long finish, with notes of grapefruit, lime, and kiwi.

As a dry, crisp, and refreshing cider, it is perfect on its own as an aperitif or it can easily pair with oysters, triple crème cheeses, and even roast chicken. 

 I recommend treating it as you would a Sauvignon Blanc or bright bubbly. Remove it from the fridge about 15 minutes before serving it in a white wine glass.

Like handling a bottle of Champagne, open this bottle by pointing the cork away from yourself or your guests. It is not as effervescent as sparkling wine, but it is wonderfully textured. Enjoy!
