Dry. Naturally Sparkling. Traditional Method. Elegant champagne-style, celebratory. Very fine, lively bubble. Disgorged 10 cases at a time with the last batch done 11 months after bottling. Made with 79% Baldwin, 11% Golden Russet and 10% miscillaneous. An excellent cider for a New Years toast, any celebration, or to elevate the atmosphere at any time.
Tasting Notes: Aromas of honey, woods, leather, petrichor. Briny, floral, thyme on the palate. Chalky tart finish, dry leaves.
